Story -

100% Victorian Malted Barley mash is fermented onsite using Australian Yeast. The mash is then double distilled in our 200L Copper Pot Still. Very large cuts of Feints & Foreshots are removed leaving only a very small Heart cut making it’s way into our barrels. The Hearts then spent 18 months in first fill 110L American Oak barrels that previously held Wild Turkey Rye Whisky, and were then split into 20L Pedro Ximinez barrels for 6months and 1 day. The final product is un-filtered, diluted down to bottling strength and left to rest for a month before being hand bottled & packaged.

Mouthfeel- heat, robust, slightly smokey

Nose- Juicy blood plum

Pallet - mid weight, heavy oak influence
